After all the celebrating and resolution making last week, I was ready to start the new year with a positive attitude. But then I lost my debit card and a hound dog showed up at my house (scared of the fireworks, I guess) and tore up all our trash. A rock flew up and cracked my windshield and my headlights burned out.

Before I replaced my headlights, I had to borrow my husband’s truck to drop one of Kora’s friends off after dark and I hit a deer on FM 535! It dented the hood and busted the grill, my husband wasn’t happy about his headlight and blinker hanging by the wires.

Then two days later, I almost hit a horse with my Aaron’s truck in Schulenburg. And YES, I did eat my black-eyed peas on New Years Day – it was just a very hectic few days but I’m staying positive.

Wagon Wheel made some changes

Did you notice some changes at Wagon Wheel? The new counter a few months ago was a shock to the regulars but it’s very nice and everyone seems to like it. Now the shelves are all angled and a lot of the displays are rearranged; it really makes the store look bigger and more inviting. There’s been a lot of changes since I worked there a few years ago, the stone out front looks great as does the wall paintings in the front hallway. I can’t wait for the restaurant to open.

Church Food Pantry

Saturday, Jan. 14 is the Rosanky Baptist Church’s Food Pantry. The Food Pantry, open to all Bastrop County, is located at the Rosanky Baptist Church at 2106 FM 535 and opens at 9 a.m. “Any non-perishable food item is appreciated,” says Staci Regalado, the church secretary. Recipe

The second-grade keyboarding class had to type recipes and bring them home for their parents to make and take back to school. Kylie choose “Black Eyed Pea Corn Bread” and she wanted me to share it, so here’s your recipe for the week:

1 lb bulk pork sausage

1 onion, chopped

1 cup corn meal

½ cup of flour

1 teaspoon of salt

½ teaspoon of baking soda

2 eggs, slightly beaten

1 cup buttermilk

½ cup vegetable oil

4 oz can of chopped green chilies, drained

¾ cup of cream style corn

2 cups grated cheddar cheese

One 15 oz can of blacked eyes peas, drained

Preheat oven to 350, grease a 13×9x2 pan. Cook sausage and onions until browned. Drain and set aside. Combine corn meal, flour, salt and soda in a large bowl. In another bowl, beat eggs, buttermilk and oil together. Combine with dry ingredients, batter doesn’t need to be blended until smooth. Add sausage and onion, corn, cheese and black eyed peas. Pour into prepared pan and bake for 50 to 55 minutes or until knife inserted in center comes out clean.

Makes 8 to 12 servings.

Kids Korner

Our craft project this week was painting with water colors on the front porch. The girls made their own signs for the bedroom doors and got just as much paint on the porch as they did on the paper. My suggestion to you is use newspaper to put under your child’s beautiful art work and protect the surface he/she is painting on! The “art box” was only $5 at the dollar store, a great investment to keep them busy for awhile.
